Rhubarb Tart

Greenhouses have helped make rhubarb available throughout the year, but its best when it becomes available a the farmer's markets. It's hard to resist picking up a bunch. Rhubarb is great for adding to jam, or combing with sweeter fruits to make a pie or tart.

Rhubarb also will keep its shape when baked, meaning it can produce beautiful patterns on baked goods.
